Perhaps my child is a budding chef?! Recently, while we were eating tacos (as we do every single Tuesday), he was saying how much he loved tacos…and also pizza. And then he suggested we make pizza tacos because “if I love pizza and I love tacos I will live pizza tacos.” Never one to disappoint my child or stifle his creativity, I said “heck yes we’ll make them next week.” And we did.

Start by sautéing one sliced onion because that’s often a topping on both tacos and pizza. Set aside and use the same pan to warm through some sliced pepperoni. Now set that aside and use the same pan to cook ground chicken in spice mix typical in pizza: salt, garlic powder, oregano, crushed red pepper, and basil if you’ve got it. Once the meat is cooked, use the pan to warm up some marinara or pizza sauce. (Heck, you could do this in the microwave if you’ve want.) Two more toppings I set out were sliced black olives and fresh shredded mozzarella. I should have also sautéed some mushrooms because Finn’s favorite pizza topping is pepperoni mushroom, but I got lazy. Finally, warm up/char some flour tortillas.

I gotta hand it to my kid – he was definitely onto something. We ate every bite!
